30 pounds ground deer meat
1 pound Tender Quick®
1 ounce black pepper
1/2 cup granulated sugar
1/4 ounce salt
1 teaspoon garlic salt
1 1/2 teaspoons mace
3 tablespoons liquid smoke flavoring
Mix
Tender Quick®, pepper, sugar, salt,
garlic salt and mace. Add to ground
meet. Mix real well. Put through a
grinder. Press into wide-mouth jars and
cook for 4 hours. Makes 30 pounds.
